How it is produced

The grapes are harvested in the early hours of the morning to preserve the aromatic intensity of the bunches. Vinification begins with a cold maceration in tank at controlled temperatures for several hours. The must is then fermented at a constant temperature of around 12°C. The production cycle concludes with careful maturation in stainless steel, chosen to preserve the varietal purity of the Sauvignon Blanc and the typical expressive liveliness of the fruit.
