Where it comes from
The grapes are grown in the northern part of Meursault, near Volnay, within the renowned Burgundy region. The vineyards benefit from excellent south and south-east exposure in the Durots, Dressoles and Malpoiriers plots. The old vines, planted between the late 1940s and early 1970s, sink their roots into deep, dense clay-limestone soils. This complex geology ensures remarkable aromatic concentration.
How it is produced
The production process begins with a rigorous manual harvest and selection of the bunches directly in the vineyard. In the winery, a slow whole-bunch pressing is carried out to preserve the integrity of the must. Fermentation occurs spontaneously thanks to the action of indigenous yeasts. The wine rests for twelve months in oak barrels, with a proportion of new wood used, and completes its maturation with a further four months in steel tanks. Any fining or filtration is carried out only if strictly necessary, to preserve the wine's natural balance of flavour.
