Gaja, Ca' Marcanda and Pieve Santa Restituta grappas are produced at the Distilleria Cooperativa del Barbaresco founded in 1980. They are produced from the distillation of fresh pomace: the distillation period starts around mid-September and ends in November.

Produktionsverfahren | The distillation of the Nebbiolo marc, dripping with wine, takes place in a state-of-the-art plant in order to preserve all the varietal aromas and fragrances intact. The still used is discontinuous, made of steel, and a jet of steam passes through the marc, carrying the alcohol vapours with it. These, subsequently drawn into the distillation column, produce a distillate that originally has an alcohol content of 70 - 75 °C. |
Reifung | This is diluted with distilled water before bottling to bring the alcohol content to that indicated on the label. |
