Vinification |
While vinification is traditional, the estate's personal style, which focuses on creating full-bodied, fruity and very well-balanced wines, is clearly recognisable. Following a long period of "submerged cap" maceration for about 25 days, malolactic fermentation takes place in steel. |
Ageing |
The wine then ages in wood for 36 months before the final blending and bottling. The final stage is bottle-ageing, for at least 24 months. |
