Soil composition Very fine sandy-clayey soil from the Miocene Safre.
Harvest Harvested by hand in crates with selection both in vines and on a selection table.
Vinification Partial destemming. The percentage of destemmed grapes is decided according to the vintage and the plots. Fermentation from 20 to 30 days in stainless steel tanks at controlled temperature. Malolactic fermentation in vats. Clarification of wines in the cellar during winter.
Ageing 8 months in 8-hectolitre terracotta vats. Bottling without filtering or filtration.
