Vinification |
Upon arrival at the winery, the harvested grapes underwent differentiated vinification processes: part underwent a 7-8 day maceration, with maximum temperatures of 25 °C, in order to enhance the extraction of soft tannins and the preservation of the grapes' fruity aromas. The other part, the most consistent, underwent a longer maceration of 10-12 days with temperatures of 30 °C and soft soaking to increase the intensity of flavour.
