Pol Roger created this Cuvée as a tribute to Sir Winston Churchill. The exact blend is unknown, although it is undeniable that it would have met with the approval of the man to whom it is dedicated, who said: 'My tastes are simple, I only want the best.' Pinot Noir predominates, providing structure, breadth and robustness, while Chardonnay contributes elegance and finesse. Composed exclusively of grapes from Grand Cru Pinot Noir and Chardonnay vineyards, vines were already in the vineyard during Churchill's lifetime. The Sir Winston Churchill cuvée is only made in the best vintages and is always released later than other Pol Roger vintage champagnes, just as Winston Churchill liked aged champagnes best.

Intense and complex aromas, dominated by enticing notes of dried fruit, toasted almond and honey.

Flavour

Full-bodied and powerful, but balanced with a fresh citrus acid note. It is very long, with creamy notes of butter, plum and ripe pear.

Vinification The must undergoes two decantations, one immediately after the first pressing, and a second in stainless steel tanks at 6°C for 24 hours. A slow cold fermentation follows this in stainless steel at a constant temperature below 18°C. Vinification takes place separately by grape variety. The wine undergoes full malolactic fermentation and is then blended. Pressing takes place in the bottle at 9°C in Pol Roger's underground cellars at 33 metres below street level where the wine is kept until it undergoes riddling by hand, a rarity in Champagne production nowadays.
