Vinification |
Soft pressing of the whole grapes before chilling. The fermentation starts with maceration with the skins at a controlled temperature. After this stage, the must is separated and fermented in stainless steel at low temperatures. |
Ageing |
In stainless steel on fine lees with bâtonnage until June of the following year, followed by a few months of ageing in the bottle. |
Pairing |
Pagus Camilla is the ideal accompaniment to both sea and lake fish, with a preference for the great raw fish dishes, mullet Livornese style, sardines from Lake Garda and the refined and varied preparations in tempura. It is also a perfect wine to be enjoyed at the end of a meal with the Doppia Panna cheeses from the Venetian Prealps and the best selections of Pecorino Toscano. Finally, it is also recommended with risotto, leek cream, lime oil and green pepper. |
