Let us surprise you: for its natural vinification a summer musty wine with notes of yellow flesh fruit was born.

Harvest	Between August 27th and September 4th the different varieties were harvested by hand respecting the specific moment of ripening.
Vinification	Spontaneous fermentation started in steel casks, a few days on the skins. After two weeks the wine was blended in fermentation and bottled. In this way the bubbles were born in the bottles that give the wine its beautiful freshness.
Ageing	Mid January: manual shaking of the bottles to bring down the tartar and yeast in the neck of the bottle. End of February: disgorging. Simply wine - without sulphites or other additives - not clarified, not filtered.
