Vinification |
The grapes are destemmed and carefully selected. Long skin maceration and frequent pump-overs. Fermentation in stainless steel tanks at a controlled temperature between 25 and 30 °C. |
Ageing |
After the malolactic fermentation, it ages in French oak barriques for 12 months. |
Pairing |
It goes well with different kind of recipe: from hearty first course dishes to fish, red meat, lamb, games and mildly aged cheeses. |
