Vinification |
25% whole bunch, short cold maceration, two "pigeage" a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction. |
Ageing |
18 months in French oak casks. 55% new, light and long soft toast from Allier and Jupilles forests. No fining, no filtration. |
Pairing |
It goes well with meat-based first and second courses, veal-based dishes with red wine sauce for a nice sensory experience. |
