Climate |
Hill less steep and cooler than the Chambertin-Clos de Bèze vineyard due to the Combe Grisard at its south extremity, that favours the presence of chill winds from the "mountain". The exposition is ideal, mid-slope, perfectly east facing. |
Soil composition |
Quite thin top soil composed of sediments, rocks and silts, laying on a marl bed rock. |
Vinification |
Maceration process : 100% destemmed bunches, seven days of cold maceration, two "pigeage" a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction. |
Ageing |
9 months in new oak barrel and then moved into one year old French oak from Tronçais forest. Operations performed during ageing : one racking after malolactic fermentation. Filtration : no fining and no filtration. All the ageing operations are carried out according to the lunar calendar. |
