Vinification |
The two varietals are vinified separately in several open vats, in some of them the skins are left to macerate for a few days. At the end of fermentation the wine continues to age on the fine lees in steel tanks, where malolactic fermentation takes place, for at least 8 months. |
Ageing |
On the fine lees for 9 months, 4 months in bottle. |
