Henriet Bazin Champagne Carte Or Brut Mill. Premier Cru 2007

Perlage

Fine bubbles and string.

Colour

Gold yellow.

Bouquet

Shows some density with a very pure mineral structure on chalk, accompanied by smells of dried fruits (pistachio, grilled almond), touches of lime tree flowers.

Flavour

The mouth is smooth and fresh with a creamy effervescence. The mineral chalky fabric brings a great delicacy with touches of dried fruits. The final is homogeneous, highly persistent and tastily delicate.

Pairing

Nice with plates like: mussels sauteed in lime and ginger, avocado cream, gambas and strips of green apple, goose foie gras and crushed pistachios, poached poultry in white cabbage chausson, fattened hen and asparagus risotto.
