Vinification |
After decanting for 24 to 36 hours, the must is put into temperature-controlled stainless steel tanks where fermentation takes place between 15 and 18 °C. At the end of fermentation, the first racking is carried out. |
Ageing |
The wine then matures on the lees for 5 months before bottling. |
Pairing |
Aperitif, ideal with shellfish and fish dishes. Also very good with roasted white meats and goat cheese. |
