Vinification In steel. 60% is immediately put into fermentation while the remaining 40% ferments after having been in natural drying for about 60 days. The two wines are blended and in spring the re-fermentation is carried out with the Martinotti Method in an autoclave.
Ageing In stainless steel followed by 12 months in the bottle. Refermentation in autoclave following the Martinotti Method.
