Harvest |
The grapes are harvested separately by type and vineyard, selecting those with the best exposure and soil type. |
Vinification |
Fermentation with maceration in stainless steel tanks for 15-18 days at a controlled temperature of 24°-28°C with daily pumping-over and délestage. At the end of alcoholic fermentation, post-fermentation maceration is carried out at 29°C, after which racking is followed. |
Ageing |
After racking, the wine, still with a good presence of fine lees, is transferred to French oak barriques and barrels. Malolactic fermentation occurs, and the wine undergoes weekly bâtonnage for about 5 months. The wine further ages for another 13 months followed by 12 months in steel and 6 in the bottle. |
Pairing |
Excellent with roasted red meats and aged cheeses. |
