| Vinification |
In white vinification. After extremely gentle crushing and destemming, which leaves the grapes perfectly intact, the grapes are immediately pressed in an equally gentle manner, then the flower must alone is transferred to steel tanks where it ferments at 12-16°C for about 15 days, without any further contact with the skins. |
| Ageing |
After a short maturation on the noble lees, and a period of stabilisation and natural clarification in the cellar, the wine is bottled after sterile filtration. |
