At first sight, this cuvée is distinguished by its limpidity. Once the froth has settled, golden highlights appear. The attack is lively without being aggressive, with citrus fruit (lemon, grapefruit) and mineral notes (in particular flint). The wine gradually opens up and makes way for the incomparable, mature Chardonnay, with notes of cream and brioche just out of the oven… With Champagne of this character, you should perhaps ask yourself with whom you should drink it, rather than how. It is peerless as an apéritif on a sunny terrace, but its freshness marries perfectly with shellfish (Dublin Bay prawns, king prawns, lobster etc.) and white meats (old style veal Blanquette with lemon or osso bucco).
