Origin	North-East Sicily, on the slopes of Etna, in the valley of the river Alcantara on the Vajasindi Estate.
Climate	Altitude: 600-800 m. a.s.l. Cold winters with snowfall, cool springs and dry summers.
Soil composition	Volcanic.
Cultivation system	Espalier, with a high density of vines per hectare and low production per vine.
Harvest	By hand, at full ripening, late September.
Vinification	Destemming, cold pre-maceration followed by traditional maceration for 6-8 days at 26-30°C.
Ageing	For about 6 months in very fine-grained French oak barriques. After bottling, it ages for at least 2 months in temperature-controlled cellars to develop the bouquet.
Production year	9,981 bottles
Allergens	Contains sulphites
Pairing	Suitable for red meat dishes and in combination with aged cheeses. Excellent with rich red meat fish dishes such as tuna or fish soups.
