After decades, this sparkling wine is back in production: extreme, dry, rigorous, unsweetened and not dosed. The company wanted to capture the essence of bubbles in its purest form: hence the decision to use the winery's best bases and to age it on the lees in the bottle for 60 months.

	Perlage Lively and elegant.
	Colour Bright straw.
	Bouquet It opens on an array of ripe fruit, including peach, apricot and golden plum, followed by a bouquet of yellow flowers and alpine butter flanked by iodised textures.
	Flavour The palate is balanced between softness and tastiness, pleasantly bitter and citrusy.

Pairing

A wine of great class that perfectly matches oysters or raw fish. It is an excellent wine for the whole meal.

Vinification	The pressing is extremely soft, only the first must is used. Fermentation of the base wine takes place in second-passage French oak barriques, malolactic fermentation is carried out completely.
Ageing	The wine remains on the lees until the addition of liqueur de tirage, with frequent bâtonnages. Refermentation is carried out using the classic Champenoise method, with the wine remaining on the lees for 5 years.
