In early October, when there is still good acidity in the grapes and a full aromatic spectrum. |
| Vinification |
Grapes are destemmed and crushed. Grapes are then macerated, followed by soft pressing, cold settling and fermentation at a controlled temperature. |

Ideal with the typical Italian appetizers, salads, pasta dishes and light risottos, especially with seafood, raw shellfish, grilled fish and goat cheese. |
