Harvest |
September. Grapes are picked manually and they arrive in the winery in plastic boxes. Here, the more ripe and healthy grapes are selected one by one. |
Vinification |
After crushing, grapes undergo a first cold maceration phase. After that, the maceration lasts 3 days beyond the end of alcoholic fermentation. Alcoholic fermentation occurs in stainless steel for 15 days. Malolactic fermentation is fully carried out. |
Ageing |
In barriques of first passage for 18 months. |
