The ancient technique of cutting the vine shoot interrupts the flow of liquids from the vine to the bunch, inducing a drying of the grapes and intensifying the concentration of the juice. The berries are flooded with sunlight, which gives breadth and depth to the aromatic spectrum developed in the skin.
