Origin |
Company's vineyards in the hilly hinterland of the central Marche region. Exposure: North-East. |
Harvest |
The grapes, entirely attacked by 'noble rot', are harvested in an advanced state of ripeness between late November and early December. Then, they are brought to the winery in small baskets to avoid tearing the grapes. |
Vinification |
The wine is obtained using white wine vinification methods: crushing of whole grape clusters; extraction of the flower must only; must clarification by cold settling; temperature controlled fermentation; tartaric stabilisation refrigeration at -4°C for 6 days; cold sterile bottling with microfiltration. |
Ageing |
Matured partly in small toasted wooden barrels and partly in steel, where it reaches full maturation after 18-24 months. Ageing in bottles for 6-12 months. |
Pairing |
Excellent with any cheese, fresh or mature, more or less piquant, Fossa cheese, blue cheese, gorgonzola, or with very decisive, delicious dishes, first courses with cheese, very substantial fish dishes, such as stockfish, fish broth, with foie gras. Excellent and very pleasant as a wine to be enjoyed by itself at the end of a meal. |
