Vinification |
The freshly harvested grapes are carefully selected, then put to dry on racks under the sun for about 15-20 days. After a brief maceration at 0°C followed by pressing, the must undergoes the delicate phase of fermentation at very low temperature, to exalt its aroma. |
Ageing |
After fermentation has been completed, the wine develops in vats for about six months, followed by further maturation in the bottle. |
Pairing |
An end-of-meal wine, it matches very nicely with blue or mature cheese and to traditional Sardinian sweets. |
