Vinification The freshly harvested grapes are carefully selected, then put to dry on racks under the sun for about 15-20 days. After a brief maceration at 0°C followed by pressing, the must undergoes the delicate phase of fermentation at very low temperature, to exalt its aroma.
Ageing After fermentation has been completed, the wine develops in vats for about six months, followed by further maturation in the bottle.
