Production technique |
Harvesting is done manually only for the ripest and most sparse bunches, collected in small, single-layer crates (plateaux). The bunches brought to the winery are further sorted, spaced out and placed to dry in well-ventilated rooms. In December, the grapes already have a good covering of mildew or noble botrytis. |
Vinification |
Vinification takes place at the end of December by pressing in a pneumatic press. The must is left to ferment naturally in small oak barrels in 100% Allier oaks from the forest of Tronçais. |
Ageing |
After fermentation and two racking, the wine ages in the same barriques for 8 months. This is followed by further ageing in the bottle for another year. |
Pairing |
It pairs well with lobster; excellent with foie gras, cheeses and dry pastries. |
