Soil composition |
The grapes selected for the production of this wine come from different areas: the slopes of the dolomitic conoids, with limestone and skeleton-rich soils, the Valle dei Laghi, with its well-drained, marly limestone soils, and the Cembra Valley, with its steep slopes, made up of gravelly fluvioglacial deposits. |
Harvest |
With boxes, when grapes were perfectly ripe and in excellent condition. |
Vinification |
After a soft crushing, fermentation in stainless steel occurs. |
Ageing |
The second fermentation took place in April after a period of maturation and stabilisation of the base wine. Disgorgement took place 60 months after the addition of the liqueur de tirage but without the addition of the liqueur d'expedition. |
Pairing |
It pairs well with dishes based on smoked fish, raw oysters, crustaceans and lobster linguine. |
