Vinification |
Fermentation takes place at a controlled temperature, preceded by pre-fermentation cryo-maceration using the best technologies following, at the same time, the tradition. After racking, the wine is left to decant in steel vats. It then undergoes malolactic fermentation in wood before facing the long ageing process in barrels and the very long refinement in the bottle. |

It pairs well with dishes of great structure. Game, chocolate, but also on its own for meditation. |
