History |
This cider is born from the experience of two mountain winemakers deeply linked to their territory: the Alps. Gianluca Telloli, from Valle d'Aosta, devoted to sparkling wine and in search of the ancient varieties of cider apples in Valle d'Aosta and in the Chamonix Valley and Giorgio Maffei South Tyrolean, creator of the Alpin Charmat method. |
Production technique |
The autoclave fermentation lasted about a month. The goal was to keep the aromatic complexity of Granny apples and Crétchien pears intact, letting the tannic complexity of Reine de Renetta and Renetta blend best with the sweetness and acidity of Raventze. |
