In the oldest vineyard on the estate, the grapes are left on the vine with more exposure to draughts. This, in favourable vintages, allows the grapes to alternate between the humidity at night at the end of October and the dry climate during the day. This allows botrytis to develop on the skin of the berries, resulting in a concentration of all the components of the must. Harvesting takes place in November to enable the fungus to interact with the grapes to develop new aromatic precursors and provide a natural concentration of the juice.
