Vinification |
The grapes are softly squeezed to obtain the first must, followed by alcoholic fermentation in steel with subsequent ageing of about 4 months. |
Ageing |
In the spring following the harvest, the lees ageing takes place, with the bottling of the base wine with the addition of 'liqueur de tirage' for re-fermentation in the bottle. After 36 months of contact on the yeasts, disgorgement and final corking take place, followed by a further period of ageing for about 6 months before marketing. |
Pairing |
It pairs with all courses, such as meats, fish, pasta, and vegetables. A perfect wine for baked fish, mixed fried fish, legumes soups, or cured meats like a savoury Mortadella Favola. |
