Ronco Calino Franciacorta Brut Saten Bio

	Perlage Fine and persistent.
	Colour Pale straw yellow with subtle greenish reflections.
	Bouquet Delicate, with notes of white flowers such as jasmine, citrus fruits, magnolia grandiflora and honeysuckle. They are followed by delicately ripe fruit notes suh as summer pear, green apple and vineyard peach, with a light spicy vein of coriander seeds and pink pepper and Genoese pandolce fading into almond.
	Flavour Enveloping and full-flavoured on the palate, with a crisp acidity that perfectly complements the overall delicacy of the wine.

Origin	From the company's vineyards in Palazzo, Cima Caprioli and Sottobosco in Cazzago San Martino (Brescia).
Soil composition	Well-drained morainic soils whose profiles were sculpted by the ancient water flows that created much of Franciacorta. Medium-textured, fertile soils with abundant organic content and sand.
Cultivation system	Guyot.
No. plants per hectare	6,000-8,000.
Yield per hectare	9,500 kg/hectare.
Harvest	By hand, with crates the first and second decades of August.
Vinification	Cooling, soft pressing of the whole grapes to extract only the first must. First fermentation in thermo-conditioned steel tanks at 13-14°C. 35% of the Chardonnay ferments in French oak barrels. Each parcel is vinified separately to enhance the uniqueness of its profile.
Ageing	At least 30 months. The second fermentation occurs in May following the harvest.

I always use Xtrawine and the service is always good There appears to have been a change this time around with the wine sent direct from Italy. Previously orders on the .co.uk site came from London so arrived much quicker. This means delivery takes a bit longer although the packaging was much better than before.
