Harvest	Hand-picking and manual selection of grape.
Vinification	Transport in boxes of 12 kg and thermo regulated in specially designed cooling chamber during 24 hours (4-6 degrees) prior fermentation. Second selection of grapes on tables separating shoulders from tips. This wine is elaborated from destemmed shoulders. Fermentation in small stainless steel tanks of 7000 liters.
Ageing	22 months in new French 80% American 20% oak barrels.

I always use Xtrawine and the service is always good There appears to have been a change this time around with the wine sent direct from Italy. Previously orders on the .co.uk site came from London so arrived much quicker. This means delivery takes a bit longer although the packaging was much better than before. Overall, a great selection of Italian wines from an excellent seller.
