Harvest |
After harvesting by hand, the grapes are sorted on a vibrating table to remove dry berries, leaf debris and stalks. They then pass to another sorting table for the removal of any grapes that are unripe, damaged or showing signs of rot. |
Vinification |
Before being transferred to the vat, the grapes are destemmed: removing the stems reduces the astringency of the future wine. Fermentation is started slowly, using indigenous yeasts, lasting 15-20 days. |
Ageing |
In barrels for 36 months. |

This wine goes well with fish or a platter of sushi-sashimi. |
