Harvest |
The grapes are hand-picked in crates, in the first half of September, when fully ripe. |
Vinification |
After destemming, the grapes are tranferred to steel vatis where they undergo a brief period of cold maceration (10 °C), followed by fermentation at a controlled temperature of 18-20 °C. The wine is racked into steel vatis, where it undergoes natural clarification. |
Ageing |
After natural clarification, it is racked into steel vatis, where it awaits bottling. |
Pairing |
Ideal with pasta and rice dishes with fish and vegetable sauces, soups, white meat and fish. |
