Harvest |
The harvest is manual and takes place at different times according to the degree of ripeness of the different grape varieties. |
Vinification |
The grapes are refrigerated to a temperature of around 5°C to be taken to the cellar where they are destemmed and pressed. Followed by maceration for 12 hours. We then proceed with fermentation at a controlled temperature of 10-12 °C. |
Ageing |
The wine remains on its yeasts for 6 months, with constant batonnage and then for two months in the bottle. |
Pairing |
Ideal as an aperitif, with cold cuts, crudités, grilled fish, soups, oriental and vegan cuisine, risottos, raw and cooked vegetables, eggs, white meats. |
