This wine will bring you back to the Roman Age: Praesidium Domini Appi, shortened to Pre.D.i.Appi was indeed the latin name of its homeland. It inherits its strenght and power, each glass will make you take you back emotions and former glory of a now forgotten age.

Colour

Intense ruby red color with granet hues.

Bouquet

Fruity scent and major twists of plum and wild berries jam. It displays light hints of spices that enrich the broad range of aromatic sensations.

Flavour

In your mouth you will perceive the typical Sangiovese feelings: distinct tannins tempered by a smoothness that makes the sip mouth-filling and silky.

Production technique Production is very limited, looking for quality. This objective is obtained thanks to an appropriate winter pruning, followed by a manual thinning of grapes in the month of August.
Vinification Fermentation is done in steel tanks, using vineyard native yeasts, at a temperature of around 29 °C, whose duration is driven by total transformation of sugars.
Ageing The wine is aged in steel tanks. First transfer is usually made after malolactic fermentation, favored by the low sulphites content. No mechanical filtration is done, but before bottling, preserving wine structural integrity. Obtained wine can be defined a full-fledged “Integral” wine.
