Ageing |
Maturation in barriques takes place separately for the first 6 months, followed by a blending and subsequent maturation of the blend for a further 2 years in barriques. This is followed by bottling and ageing for at least 8 months before release. |
Pairing |
It pairs well with red meats, game and aged cheeses. Although it is a wine with a fine structure, it demonstrates a peculiar versatility of pairing, clearly within the range of gastronomic proposals with a particular gustatory impact or elaborate preparation, thus requiring density of sensations and, at the same time, agility in development. This wine also supremely enjoys forays into exotic preparations with an invigorating spicy or spicy expression. |
