Vinification |
Rosé vinification of the Pinot Nero grapes, which represent the dominant part of the cuvée, with brief maceration of the skins and subsequent soft pressing, the latter also reserved for the Chardonnay grapes from areas with a very high sparkling wine vocation. Fermentation is conducted separately for the two varieties at a controlled temperature of 15-16°C. |
Ageing |
After the formation of the cuvée, liqueur de tirage is added to the base wine in spring, followed by a second fermentation in the bottle at a cellar temperature of 11-12°C, with the product then remaining on the lees for at least 22 months before being disgorged and marketed. |
Pairing |
Ideal as an aperitif, it goes well with fish appetisers, particularly if rosé-coloured, such as salmon, prawns and langoustines, offering its best also on the whole meal with elaborate seafood dishes. It is also an interesting pairing with oriental dishes and spicy dishes. |
