Soil composition |
Clayey, with wide bands of a Pleistocene paleosol consisting of an extremely compact silty-sandy clay, known locally as "caranto". It is a type of soil that is particularly present, in the Venice lagoon and also found in alluvial sediments of the Veneto-Friuli plain. |
Vinification |
The wines are vinified separately. They are fermented in cement barrels. |
Ageing |
Conducted still keeping the wines separate. In fact, they stopped for 18 months in barriques, of which about one third new, the others of second or third taste. Before proceeding to unify the different barrels, some were discarded, not considered to be up to standard. So the wines were united and remained in the tank no less than a month. A 3-month bottle aging period followed. |
Pairing |
Roasted red meat wine, game even if processed with sauces. You can taste it with mature cheeses. |
