Il Castagno is the wine I have always wanted to make, the main wine, in a way the symbol of our company. Il Castagno is intended to be a unique and original Syrah, very Tuscan, authentically varietal but, above all, a faithful and sincere expression of the terroir of Cortona and of the special characteristics of our beautiful region of Tuscany, the result of simple, ethical and environmentally friendly cultivation operations and winemaking practices, under the banner of the best "technological craftsmanship".

Bouquet

The nose has complex, deep and fascinating aromas of ripe red and black fruits, chocolate, coffee and white pepper, with nuances of blond tobacco, spices and tar.

Flavour

The Chestnut is a powerful wine, but at the same time harmonious and balanced, with a remarkable structure, soft and elegant. The palate offers velvety tannins and correct acidity, the taste is fruity and spicy, with exuberant notes of strawberries, blackberries and cherries, balsamic and mineral hints, grilled meat and cloves. The finish shows great character and personality, with a layered, very long and persistent aftertaste.

Harvest The grapes are carefully selected throughout the year, particularly before and during the harvest. The grapes are harvested strictly by hand into small 15 kg perforated crates. (usually from mid-September).
Vinification After extremely soft crushing and destemming (to leave the berries intact), alcoholic fermentation takes place (usually spontaneously, thanks to the indigenous yeasts) in temperature-controlled steel tanks for about 15 days. The subsequent maceration of the skins lasts another three weeks or so.
Ageing Malolactic fermentation involves only the free-run juice (the wine obtained from pressing the marc is never used for the production of our wines) and takes place spontaneously, without inoculation of bacteria; this is followed by a period (at least 18 months) of refinement on the noble lees in the best French oak barrels from Allier, Nevers and Troncais.
