Vinification |
The must obtained from the soft pressing of the grapes, after being left to cool naturally, has fermented in stainless steel barrels at a controlled temperature. |
Ageing |
After racking, the wine matures for about 12 months in temperature-controlled stainless steel casks. This is followed by bottling (tirage), refermentation in the bottle, and a minimum of 12 months ageing on its own yeasts in the underground cellar with a constant temperature of 10 -12 °C. |
