Fine and persistent.

Colour

Bright, clear gold yellow.

Bouquet

Intense, clean, pleasing and refined aromas start with hints of yeast and hazelnut followed by aromas of banana, pineapple, hawthorn, grapefruit, plum, apple, honey and bread crust.

Flavour

Good correspondence to the nose with an effervescent and crisp opening. Balanced alcohol content with a good body. The finish is persistent with flavours of plum, grapefruit, and hazelnut.

Pairing

Excellent with stuffed pasta, grilled fish, white meat, fish soups, and mushrooms.

Ageing In steel for six months. The draft is done in the spring after adding refined cane sugar and yeast. 24 months on the lees and a further 3 months after disgorgement.
