The 'Vènis' praises the mercantile soul of Venice. Exotic tastes influenced the lavish Venetian banquets of the 18th century with spices and delicacies imported from fascinating places, skilfully paired with Sauvignon blanc and Chardonnay.

Harvest	Early September, when the grapes have reached aromatic ripeness, still retaining good acidity.
Vinification	Soft pressing of the whole grapes, cold decanting of the must and fermentation carried out at controlled temperature for Sauvignon Blanc in concrete vats and for Chardonnay in barriques.
Ageing	The wine refines on its noble lees for several months in concrete vats at a controlled temperature. The lees are frequently mixed to increase the thickness and smoothness of the wine.

Pairing	Ideal with spaghetti with clams, grilled sea bass, fried squid and wild salmon. Moreover, it is fantastic with all the asparagus preparations.

I always use Xtrawine and the service is always good There appears to have been a change this time around with the wine sent direct from Italy. Previously orders on the .co.uk site came from London so arrived much quicker. This means delivery takes a bit longer although the packaging was much better than before.
