Harvest |
Harvesting is carried out manually at the moment of correct ripening of sugars, acids and pH, usually from the beginning to the end of October, depending on the variety. Montepulciano grapes are harvested in an advanced state of over-ripeness to favour the structure, concentration of substances and softness of the wine. |
Vinification |
The vinification process takes place with very long macerations to favour the maximum extraction of substances from the grapes. |
Ageing |
After all fermentations are completed, the wines obtained from the different grape varieties are blended and matured in French oak barriques for at least 18 months, then refined for a further 6 months in the bottle. |
Pairing |
Ideal with large meats, game, braised meats, mature cheeses or as a companion wine. |
