The beginning of the cultivation of the vine by the Tornatore Family dates back to 1865 when the great grandfather of the current owner began farming. In 1910 Giuseppe, the grandfather, built a house with a millstone in the district Piano Fair with 2 ha of vineyards adjacent, in addition to other two on the North side of Etna in the district at an altitude of 1,000 meters Ferns Plan s.l.m.
The farm lies on the northern slope of Mount Etna, the highest active volcano in Europe. The soils are of volcanic origin and derived from the decomposition of the lava masses, ashes and lapilli. They are generally formed locally (autochthonous) or transported by rainwater, which in certain flat areas slopes, have given rise to extensive sandy extensions, blackish in color, deep and very fertile. The combination of soil, climate and the wisdom of the winemakers, have made the northern slope of Etna an ideal territory for the production of wines of high quality but above all, special and unique.

Cultivation system Spurred cordon.
Yield per hectare 6,000 kg/hectare.
Harvest By hand, the second and third decade of October with small crates. The grapes then undergo manual sorting at the winery.
Wine making Destemmed and lightly crushed, grapes arrive at the press where they are softly pressed. The must obtained is fermented, without any temperature control, in 225-litre acacia barriques. After fermentation, the wine obtained rests on the fine lees for about 8 months.
Aging About 8 months in barrique of acacia wood and 6 months in bottle.
