Before the great-grandfather Hyacinth, his grandfather John and his father Augustine said Dino. Today there are three brothers Dino, Gianni and Diana Bertolino prosecutors of the family tradition. The company has evolved in different directions, from wine-growing country in international trade in Italian wine and each generation has been able to distinguish his own style. Tenuta Olim founded in 1998 Baud, a company whose sole objective is to produce wines of superior quality. The Nizza DOCG Riserva Bauda 2015 was awarded by Doctor Wine - Daniele Cernilli with the special prize 2021 "Best Barbera" (score 97/100).

Harvest The grapes are removed from the stalks and crushed on the evening of the same day they are harvested.
Wine making Placed in stainless steel tanks at a temperature of 12 °C, where the skins macerate briefly in contact with the must. After being separated from the skins, alcoholic fermentation begins at a temperature of 15 6 °C.
