Description

Situated in the heart of the Rhone Valley, dominated by mountains, our vineyard grows on rocky and steep hillsides, among the highest in France. Between alpine influences and provencal sun, severe winters and dry summers, our wine owes its character to the contrasting climate of its territory.

Wine making Clairette de Die Tradition is produced according to a specific process named the « Méthode Dioise Ancestrale ». The grapes are destemmed and crushed as soon as they arrive in the winepress, then juices are selected and stored in refrigerated vats. This is the beginning of a very slow fermentation due to the combined effect of yeasts naturally present on the grapes and the very low temperature (0 0 °C). Then, half-fermented juices are bottled, the sparkling process and fermentation of the natural sugars contained in the juice continue until it reaches 8% vol. (with no drawing liquid added).
