Description
Made from a local white grape that only grows in Liguria, Pigato is a flagship wine of Ligurian winemaking. The label features Castle Doria in golden yellow, like the straw yellow tinges of the wine, emphasised by a white line that is a stylised image of the humpback bridge, on a white background. It is an image that encapsulates Dolceacqua.

The wineries that form part of the cooperative - the ‘Cooperativa Riviera dei Fiori’ – are located in areas of the municipalities of Apricale, Baiardo, Camporosso, Castelvittorio, Dolceacqua, Isolabona, Perinaldo, Pigna, Rocchetta Nervina, S.Biagio della Cima, Soldano and several zones in the municipalities of Vallecrosia, Ventimiglia and Vallebona. In order to become more productive and competitive, the wineries of Rossese di Dolceacqua joined to form a cooperative in 1978. Read more

Wine making | The hand-harvested grapes are delivered by the members of the cooperative just a few hours after the grape harvest. The grapes are soft pressed with extreme delicacy to avoid damaging the skins. Before the classic white winemaking process begins, some of the grapes are macerated with CO2 snow for a few hours to accentuate the typical character and style of the wine. Fermentation takes place at a controlled temperature (16 8°C) in stainless steel vats using selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the wine. |
Aging | After a brief period of ageing in steel vats, the wine is bottled in the spring following the vintage (harvest). |
